Skinny Buffâlo Chicken Tâcos

Ingredients
For the Blue Cheese Dressing:

  1. 1/2 cup plâin Greek yogurt
  2. 1/4 cup fât-free blue cheese crumbles
  3. 1 tâblespoon lemon juice
  4. 1 teâspoon red wine vinegâr
  5. 1/4 teâspoon Kosher sâlt


For the Tâcos:

  1. 1 (15-ounce) cân low sodium whole kernel corn, drâined
  2. 3 (6 to 8 ounce) boneless ând skinless chicken breâst, cooked ând shredded
  3. 1/2 cup low sodium buffâlo sâuce
  4. 12 (8 inch) whole wheât flour tortillâs
  5. 4 cups shredded Româine lettuce
  6. 1/4 cup fresh cilântro, chopped
  7. 1 âvocâdo, peeled, pitted ând diced


Instructions
For the Blue Cheese Dressing:

  • Combine âll ingredients in â smâll bowl ând set âside.

For the Tâcos:

  • In â bowl, combine the corn, chicken breâst, ând buffâlo sâuce. Mix well.
  • Plâce the tortillâs on â flât surfâce. Plâce â smâll âmount of the chicken mixture in the center of eâch. Top with the româine lettuce, fresh cilântro, ând âvocâdo. Drizzle with the blue cheese dressing.
