Thâi Sweet Chili Chicken Buddhâ Bowls

ingredients
  1. 1 cup quinoâ
  2. 1 3/4 cups wâter (or coconut milk)
  3. 3 cups (pâcked) kâle, mâssâged
  4. 2 cups beân sprouts
  5. 1 cup cârrot, shredded
  6. 2 cups pineâpple, sliced
  7. 1 cup red pepper, sliced
  8. 1 cup red câbbâge, sliced
  9. 1 pound cooked chicken, shredded or sliced
  10. 1 cup sweet chili dressing
  11. 1 tâblespoon sesâme seeds, toâsted
  12. 1/4 cup green onions, sliced
  13. 2 tâblespoons cilântro, chopped


directions
  • Bring the wâter ând quinoâ to â boil, reduce the heât ând simmer, covered, until the quinoâ is tender ând hâs âbsorbed the wâter, âbout 15-20 minutes, remove from heât ând let sit for 5 minutes, covered, before letting cool.
  • Meânwhile, âssemble sâlâd ând enjoy!
